Base Ingredients:

Dough (Choose 1, makes 1 loaf):
  • Whole wheat dough:

    • 3 cups whole wheat flour

    • 1 packet (2 1/4 tsp) active dry yeast

    • 1 tsp salt

    • 1 tbsp sugar

    • 1 cup warm water

    • 2 tbsp olive oil

  • Multigrain dough:

    • 2 cups multigrain flour

    • 1 cup whole wheat flour

    • 1 packet (2 1/4 tsp) active dry yeast

    • 1 tsp salt

    • 1 tbsp sugar

    • 1 cup warm water

    • 2 tbsp olive oil

  • Gluten-free dough:

    • 2 cups gluten-free flour blend

    • 1 packet (2 1/4 tsp) active dry yeast

    • 1 tsp salt

    • 1 tbsp sugar

    • 1 cup warm water

    • 2 tbsp olive oil

Savory Fillings (Choose 1-2, 1-2 cups total):
  • Cheese: mozzarella, cheddar, feta, vegan cheese

  • Vegetables: spinach, bell peppers, onions, mushrooms

  • Proteins: tofu, tempeh, chickpeas, lentils

  • Fresh herbs: basil, oregano, thyme, parsley

  • Spices: cumin, paprika, garlic powder, black pepper

Sweet Fillings (Choose 1-2, 1-2 cups total):
  • Fruits: apples (diced), berries, pears (diced), peaches (diced)

  • Nuts: walnuts, almonds, pecans

  • Sweeteners: honey, maple syrup, coconut sugar

  • Spices: cinnamon, nutmeg, cardamom

Binding Ingredients (Optional, Choose 1-2, 1/4-1/2 cup total):
  • Nut butters: almond, peanut, cashew

  • Greek yogurt

  • Cream cheese

Method of Preparation:

  1. Prepare Dough:

    • Whole Wheat Dough:

      • In a small bowl, dissolve the yeast and sugar in warm water. Let sit for 5-10 minutes until frothy.

      • In a large bowl, mix the whole wheat flour and salt. Add the yeast mixture and olive oil. Mix until a dough forms.

      • Knead the dough on a floured surface for about 10 minutes until smooth and elastic. Place in a greased bowl, cover, and let rise in a warm place for about 1 hour, or until doubled in size.

    • Multigrain Dough:

      • Follow the same steps as the whole wheat dough, using the multigrain flour and whole wheat flour.

    • Gluten-Free Dough:

      • Follow the same steps as the whole wheat dough, using the gluten-free flour blend.

  2. Prepare Fillings:

    • For savory fillings, sauté the vegetables and proteins if desired, then mix with cheese, herbs, and spices.

    • For sweet fillings, mix the diced fruits, nuts, sweeteners, and spices. Optionally, mix with nut butter or cream cheese for added binding and flavor.

  3. Assemble the Loaf:

    • Roll out the dough on a floured surface into a rectangle.

    • Spread the filling evenly over the dough, leaving a small border around the edges.

    • Roll the dough tightly from one end to the other, sealing the edges by pinching them together.

    • Place the rolled loaf seam-side down in a greased loaf pan. Cover and let rise for about 30 minutes.

  4. Bake:

    • Preheat the oven to 375°F (190°C).

    • Bake the loaf for 30-35 minutes, or until golden brown and hollow-sounding when tapped.

    • Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

  5. Serve:
