Indulge in a variety of flavorful and healthy steamed snacks and meals with this versatile template. Perfect for creating dishes like idlis, dhoklas, bao, momos, and dumplings, this guide helps you mix and match ingredients to craft delicious, bite-sized treats that are light yet satisfying.

Base Ingredients:

Batter/Dough (Choose 1-2, 2 cups total):
  • Rice flour

  • Chickpea flour (besan)

  • Whole wheat flour

  • All-purpose flour

  • Semolina (rava/suji)

Liquid (Choose 1, 1-2 cups):
  • Water

  • Yogurt

  • Buttermilk

  • Coconut milk

Leavening Agents (Optional, Choose 1, 1-2 teaspoons):
  • Baking powder

  • Baking soda

  • Eno fruit salt

Fillings (Choose 2-3, 1-2 cups total):
  • Vegetables:

    • Grated carrots

    • Finely chopped spinach

    • Grated zucchini

    • Finely chopped bell peppers

    • Shredded cabbage

    • Chopped green beans

  • Proteins:

    • Paneer, crumbled

    • Tofu, crumbled

    • Cooked and mashed chickpeas

    • Cooked and mashed lentils

Flavor Enhancers (Choose 2-3, 1-2 teaspoons each):
  • Fresh herbs: cilantro, mint, parsley

  • Spices: cumin, coriander, turmeric, black pepper, garam masala

  • Aromatics: garlic, ginger, green onions

Sauces/Dips (Choose 1-2, 1/4-1/2 cup total):
  • Green chutney

  • Tamarind chutney

  • Soy sauce

  • Peanut sauce

  • Yogurt dip

Method of Preparation:

  1. Prepare Batter/Dough:

    • Idlis and Dhoklas:

      • Mix rice flour or chickpea flour with water or yogurt to form a smooth batter. Add a pinch of salt and your chosen leavening agent. Let the batter rest for 10-15 minutes.

    • Bao, Momos, and Dumplings:

      • Mix whole wheat flour or all-purpose flour with water to form a soft dough. Knead until smooth and let rest for 30 minutes.

  2. Prepare Fillings:

    • Finely chop or grate your chosen vegetables.

    • Mix the vegetables with your chosen protein and flavor enhancers in a bowl. Season with salt and spices.

  3. Assemble:

    • Idlis and Dhoklas:

      • Grease idli molds or a steaming tray. Pour the batter into the molds or tray. Steam for 10-15 minutes until a toothpick inserted comes out clean.

    • Bao, Momos, and Dumplings:

      • Roll out the dough into small circles. Place a spoonful of filling in the center of each circle. Fold and seal the edges. Steam for 10-12 minutes until the dough is cooked through.

  4. Serve:

    • Arrange the steamed bites on a serving platter.

    • Serve hot with your chosen sauces or dips.
