Whip up a batch of delicious and nutritious muffins with this versatile template. Perfect for breakfast, snacks, or dessert, these muffins can be customized with a variety of flours, sweeteners, add-ins, and toppings to create endless flavor combinations that cater to your preferences and dietary needs.

Base Ingredients:

Flour (Choose 1-2, 2 cups total):
  • Whole wheat flour

  • Oat flour

  • Almond flour

  • Buckwheat flour

  • Spelt flour

Leavening Agents:
  • Baking powder: 2 teaspoons

  • Baking soda: 1/2 teaspoon (optional, for extra fluffiness if using acidic ingredients like yogurt or buttermilk)

Binding Agents (Choose 1, 2 large eggs or equivalent):
  • Eggs: 2 large

  • Flax eggs: 2 tablespoons ground flaxseed mixed with 6 tablespoons water

  • Chia eggs: 2 tablespoons chia seeds mixed with 6 tablespoons water

Liquid (Choose 1, 1 cup):
  • Milk (dairy or plant-based)

  • Buttermilk

  • Almond milk

  • Coconut milk

  • Oat milk

Sweeteners (Choose 1-2, 1/2-1 cup total):
  • Honey

  • Maple syrup

  • Coconut sugar

  • Agave nectar

  • Stevia (to taste)

Flavor Enhancers (Optional, Choose 1-2, 1-2 teaspoons each):
  • Vanilla extract

  • Cinnamon

  • Nutmeg

  • Lemon zest

Add-ins (Optional, Choose 1-2, 1 cup total):
  • Fresh fruits: blueberries, strawberries, raspberries, diced apples, diced bananas

  • Nuts: chopped walnuts, almonds, pecans

  • Seeds: chia seeds, flaxseeds, pumpkin seeds

  • Dark chocolate chips

  • Shredded coconut

  • Dried fruits: raisins, cranberries, apricots

Toppings (Optional, Choose 2-3, 1-2 tablespoons each):
  • Oats

  • Chopped nuts

  • Seeds

  • Coconut flakes

  • Brown sugar

  • Lemon or orange zest

Method of Preparation:

  1. Prepare Dry Ingredients:

    • In a large bowl, whisk together the chosen flour(s), baking powder, and optional baking soda.

  2. Prepare Wet Ingredients:

    • In another bowl, combine the liquid, binding agents, sweeteners, and flavor enhancers.

  3. Combine Ingredients:

    • Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix; a few lumps are fine.

  4. Fold in Add-ins:

    • Gently fold in your chosen add-ins (e.g., fresh fruits, nuts, seeds).

  5. Fill Muffin Tin:

    • Line a muffin tin with paper liners or grease it lightly. Fill each muffin cup about 2/3 full with the batter.

  6. Add Toppings:

    • Sprinkle your chosen toppings over the batter in each muffin cup.

  7. Bake:

    • Preheat the oven to 375°F (190°C). Bake for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

  8. Cool and Serve:

    • Let the muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely. Serve warm or at room temperature.
