Base Ingredients:

  • Eggplant: sliced into rounds

  • Bell peppers: sliced into strips

  • Mushrooms: halved or whole

  • Onions: sliced into rings

Proteins (Choose 1-2, 1-2 cups total):
  • Tofu: cubed

  • Tempeh: cubed or sliced

  • Paneer: cubed

  • Cooked chickpeas

  • Lentil patties

Batter/Dredge (Choose 1, enough to coat):
  • Basic Batter:

    • 1 cup chickpea flour (besan)

    • 1/2 cup water (adjust for consistency)

    • 1/2 tsp turmeric

    • 1/2 tsp cumin

    • Salt to taste

  • Tempura Batter:

    • 1 cup all-purpose flour

    • 1 cup cold sparkling water

    • 1 egg (optional for extra crispness)

    • Salt to taste

  • Spicy Dredge:

    • 1 cup rice flour or cornmeal

    • 1 tsp paprika

    • 1/2 tsp cayenne pepper

    • Salt and pepper to taste

Flavor Enhancers (Choose 2-3, 1-2 teaspoons each):
  • Fresh herbs: cilantro, parsley, basil, mint

  • Spices: garlic powder, onion powder, paprika, black pepper

  • Aromatics: minced garlic, minced ginger, green onions

Method of Preparation:

  1. Prepare Vegetables and Proteins:

    • Wash and cut your chosen vegetables and proteins into bite-sized pieces.

  2. Prepare Batter/Dredge:

    • Basic Batter:

      • In a bowl, mix chickpea flour, water, turmeric, cumin, and salt until smooth.

    • Tempura Batter:

      • In a bowl, mix all-purpose flour, cold sparkling water, and salt. If using, add the egg and mix gently.

    • Spicy Dredge:

      • In a shallow dish, mix rice flour or cornmeal with paprika, cayenne pepper, salt, and pepper.

  3. Coat Ingredients:

    • Dip vegetables and proteins into the batter or dredge, ensuring they are well-coated.

  4. Fry:

    • Heat oil in a deep frying pan or pot to 350°F (175°C).

    • Fry the coated vegetables and proteins in batches until golden brown and crispy, about 3-5 minutes per batch. Do not overcrowd the pan.

    • Use a slotted spoon to remove fried items and drain on paper towels.

  5. Enhance Flavor:

    • While still hot, sprinkle fried items with your chosen flavor enhancers such as fresh herbs, spices, or zest.
